My Favorite Christmas Dessert

My all time favorite Christmas dessert is Peppermint Ice Cream Pie.  It is not only delicious, it is pretty much the easiest and fastest recipe to make.  Four ingredients and about 10 minutes.  The key is to shop early for your ice cream, I have tried many brands, but my favorite is the Edy’s Peppermint for its flavor and coloring.  I love how the pink ice cream looks with the chocolate and red/white of the peppermint.   You need to start checking your local grocery stores ice cream section right before Thanksgiving and buy it the minute you see it, otherwise you will be out of luck because it sells out immediately.  The other key item is the Oreo pie crust, this seems to disappear from our grocery store at about the same time.

My Favorite Christmas Dessert

Serves: 3 pies
Ingredients
  • 2 cartons Edy's Limited Edition Peppermint Ice Cream
  • 3 Oreo pie crusts
  • 1 bottle Hershey's Special Dark Chocolate Syrup
  • 1 jar Crushed Peppermint or Candy Canes that you crush in a Ziplock with a rolling pin
Instructions
  1. Scoop the ice cream into pie crust(s)
  2. Take a sheet of parchment paper, big enough to cover the pie, and place over the ice cream
  3. Using a rolling pin, on top of the parchment paper, roll the ice cream so that it is smooth, flat and even with the pie crust. You can leave the paper or remove carefully and cover with the plastic lid from the Oreo pie crust container. When I make several pies, I use the parchment paper as the cover and I stack the pies in my freezer. It takes up less room than when covered with the plastic lids.
  4. Put the pie(s) in the freezer until ready to serve
  5. When it is time to serve the pie(s), remove from the freezer and take off the lid or parchment paper. Cut in desired portions and plate each piece.
  6. Dribble the syrup in a zigzag pattern over the plated pie wedges. Scatter the crushed peppermint or candy canes.
  7. Serve immediately

I like to keep a few in my freezer for last minute invitations or get togethers, it is a crowd pleaser and the perfect ending to a winter meal!

Yesterday, I was in Baskin Robbins – they had tons of the pink Peppermint ice cream – and, they had a seasonal flavor – Peppermint Bark in the Dark – oh boy!   2. I love peppermint ice cream! We like to take vanilla Haagen-dazs and mix in peppermint extract and crushed candy canes. I will have to try your pie!
