Last weekend I knew I would need a serious pick-me-up after our trip to Brimfield and made Double Chocolate and Espresso Cookies from Weeknights with Giada: Quick and Simple Recipes to Revamp Dinner. They are so good you will not believe it!
A must have gadget for this recipe is a food processor. I used a white Cuisinart 3 cup Mini for chopping the dark chocolate espresso beans.

They were just what we needed when we got in the car after a very successful and long day of shopping at Brimfield. A lot of chocolate with soft morsels and a little crunch from the espresso beans. So good..
