Spring is officially here and it is time to enjoy artichokes. I have always shied away from them in the store, thinking they would be hard to work with, but they are actually very easy to cut, clean and cook.
I made Roman-Style Artichokes (below) from the March issue of Martha Stewart. The directions were very simple and the result was delicious. Recipe Note: I would mix the cooking liquids and herbs together and then pour over artichokes.

Artichokes are hugely popular in my house! While the Roman style artichokes look delicious, we just steam them chez nous. I clip the leaves before cooking and serve with melted lemon butter – couldn’t be easier!
