The slow cooker and I are great friends on Sundays. There is nothing better than knowing your meal will be ready at dinner time, especially after a very busy weekend, and all you have to do is pull together a few easy sides. An added bonus is there is no mess because you cleaned up your preparations when you put everything in the slow cooker that morning. The hardest part is finding yummy slow cooker recipes. Last weekend we made slow cooker korean shredded beef tacos. They were delicious and were really good the next day for leftovers! This recipe is going to be added to our dinner rotation.
1. As the recipe suggests I would recommend using a mandolin for slicing the cucumbers and red onions for the slaw. It was a really nice looking topping and it tasted wonderful with the meat.
2. We found that we did not cook the beef ribs long enough and they did not shred easily off the bone. I would suggest cooking them longer or checking them when the 8 hours is done to see that they are cooked to your liking.
