Double-Chocolate Oatmeal Cookies from God’s Love We Deliver Cookbook

  • 1 1/2 cups all-purpose flour
  • 4 1/2 tablespoons cocoa powder
  • 1 teaspoon baking soda
  • 4 ounces (1 stick) butter or margarine, softened
  • 3/4 cup light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats
  • 1 cup chocolate chips

Instructions

  1. Prehat oven to 350F
  2. In a bowl, whisk together the flour, cocoa powder, and baking soda. Blend well
  3. Using an electric mixer, beat the butter and sugars until blended.
  4. Add the eggs and vanilla, beat until incorporated.
  5. Add the flour mixture and beat until just incorporated.
  6. Fold in the oats and chocolate
  7. Drop rounded tablespoons of dough onto parchment paper or silicone-lined (silpat) baking sheets about 1 inch apart.
  8. Bake 1 sheet at a time until golden brown. about 8 to 10 minutes per batch
  9. Transfer cookies to a rack to cool
  10. serve
