Week One of Salad Days Of Summer – Menu Planning Made Easy
Are you tired of not knowing what to make for dinner? Are you stuck on the protein…and what to pair with it? For the month of July, I will be sharing 27 salads for you to make, eat and share.
What? That’s a crazy amount of salads!
I know! I hope I can pull it off! But seriously.. I have been doing monthly exercise challenges on my Instagram / Facebook Stories and I thought.. hmmm ..what should we do for July?? After moving into our house in May, my husband and I have been in a cooking rut. When we were living with my parents (for over a year!), my mom was the best, she would make sure we had a plan for dinner – a menu and shopping list – before ten in the morning! I now understand why she was on top of it. If we let it go until after work… we would scramble and either eat out, have frozen pizza or some carb loaded meal.
I knew things had to change and fast!
If I created a challenge around eating better, we would eat better. A totally selfish challenge but one we really need. I decided Salad Days of Summer was going to be our July Challenge.
Wait? A Salad challenge? How is that going to work?
I am winging that part… but what I am hoping is that like our Get Organized Challenge, anyone who joins the challenge can pick from the weeks salads that I post and make some new recipes that week.
Week One Salads
It’s that easy! No pressure, no rules. All you have to do is find a recipe that talks to you and add it to your menu this week… how easy is that?

I asked my followers to submit their favorite recipes! YES! Real people who like to eat and cook have sent me their favorite salad recipes! How cool is that? We are sharing what we love with each other and you know there are going to be some really good recipes coming your way!
How do I get the Recipes?
I will be posting them here on the blog and if you follow me on Instagram or Facebook – I will link them there for you.
So how is it going to work week to week?
I will post the weeks salads on Monday and the recipes throughout the week. At the end of the challenge, I will have a “cook book” of all the salad recipes you can download – how great is that??!!!
Can I submit a recipe for the challenge?
YES! please do! We have 3 more weeks to go and I would love to get your tried and true creations to add. If it is from a blog, website be sure to send me the link so I can credit the source. If it is your own recipe, I will give you credit too!
This is going to be a really fun month with lots of good things to eat!
