Last years July Fourth beach picnic was so much fun (menu here), we decided to do it again and this time we opted for a more casual picnic. To start off the evening, I made a blueberry limeade cocktail and Christine brought corn fritters and spinach dip for appetizers. We then had chilled cucumber soup with yogurt and dill accompanied by BLT’s. I had high hopes for the BLT’s but they did not work out as I had imagined. Firstly, I bought several loaves of fresh bread and realized that they were too dense for the sandwiches (but perfect for bread pudding). Secondly, the really crispy bacon turned chewy, the bread got flat and soggy from the tomato and mayonnaise. Oh well.. not a total disaster, but not as fabulous as I had planned.
The sandwiches may have been not up to par but dessert was a hit!
For dessert, Lisa made the most scrumptious salted caramel chocolate cupcakes that made everything right in the world (if only she had brought two cupcakes per person…)! It was a beautiful night filled with great friends, delicious food and many laughs.
