I wanted to get a head start and make some of this weeks salads so I could share them as a post. But turns out.. between work (yes, I have a 9 to 6 job) and life…
I got a little over enthusiastic!
I don’t think I will be able to make every single salad to post daily. So I am going to try my best and hope we can make them all… this summer LOL!

Who is ready for a Watermelon Salad with Feta and Cucumber?
This recipe comes from Denise, a good friend that lives at the beach in the summer, who knows what people want to eat in the Summer! Boy, did she got it right with this one!
We picked up a pretty big fresh local Florida watermelon over the weekend and it turned out to be much larger than I had thought. When I started cutting it.. I knew I had more than enough for this salad, slices and another bowl on the side!
Does Watermelon Freeze??
I made the dressing in the recipe, but honestly, I would prefer to just squeeze a lime over it and maybe a dribble of oil. The ingredients were so fresh and flavorful together it really didn’t need that much olive oil.
It was super hot today and we all really enjoyed the crisp, cool watermelon and cucumber paired with the salty feta with mint mixed in. YUM!

Watermelon Salad with Feta and Cucumber Recipe

Ingredients
3 cups watermelon cubed or balled
1 1/2 cups sliced cucumber seeds removed
2 tablespoons mint thinly sliced or small mint leaves
1/3 cup feta cheese crumbled
3 tablespoons olive oil
1 tablespoon lime juice
salt and pepper to taste
Instructions
- Place the watermelon, cucumber and mint in a large bowl.
- In a small bowl, whisk together the olive oil, lime juice and salt and pepper.
- Drizzle the dressing over the melon mixture and toss to coat.
- Sprinkle with feta and serve
