One of the best things about being quarantined is getting together with my college besties every few days. Like the rest of the world, we are burning up the zoom line with hour-plus virtual calls. We may not have seen each other in ages but we took up right where we left off. We aren’t letting time zones interfere with our get-togethers as we are located all over the US and London. It is great to catch up, laugh about our quarantine challenges, life in general, and share all kinds of things.. including recipes
Seems that we all have overripe bananas… one thing leads to another and recipes were exchanged. And then the pictures of banana bread started appearing. YUM.
Anyone else making Banana Bread?
I have always been a fan of this classic recipe from the silver palate and Suzanne suggested this recipe for paleo banana bread that she makes. She recommends using half the sugar and half the oil.
This time, my son requested his grandmother’s Banana Bread recipe with chocolate chips which I am sharing it below – I hope you don’t mind Grandma 🙂 – it is a family favorite!
Not ready to get baking? Freeze your ripe bananas for when you are ready. It is super easy and here is what you need to do:
How to Freeze Bananas (or Any Fruit)
- Peel the bananas
- place whole bananas or sliced bananas on a wax paper-lined baking sheet ( I use the half-sized baking sheets that I can slide into my freezer)
- freeze for approx. 2 hours until frozen solid
- place frozen whole banana or slices into freezer-safe ziplock bags.
- label the bags with the date, contents and portion size
Pro Tip: Slicing the bananas make it easier to measure out for your recipes
Banana Bread
Ingredients
- 1 stick margarine or butter softened
- 1 cup sugar
- 2 eggs
- 1 1/2 cups Flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 cup mashed bananas approx. 2 good size
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
Optional:
- 1/2 cup nuts and/or chocolate chips
Instructions
- Pre-heat oven 350 degrees
- Lightly grease a 9x5 loaf pan
- In a large bowl, combine flour, baking soda and salt.
- In a separate bowl or standing mixer, cream together butter and sugar.
- Add in eggs one at a time, blend well.
- Add sour cream, vanilla extract and mashed bananas until well blended.
- Stir flour mixture into banana mixture, stir just to moisten.
- Optional: Add in nuts and/ or chocolate chips
- Pour batter into prepared loaf pan.
- Bake in preheated oven for 1 hour, until a toothpick inserted into center of the loaf comes out clean.
- Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
