I shared with you a while ago that my husband loves his cast iron skillet (see this artichoke chicken skillet recipe) and has mastered cooking amazing one dish meals with it. I hope I told you that he is the cook behind most (ok!! ALL) the cooking on the blog. I couldn’t do it with out him. He takes the best care of me and our sons, including putting up with my crazy ideas for the blog and the endless ideas that I can’t seem to get on here. He deserves all the credit and I am sorry if I haven’t given him a BIG shout out. He is the one who finds the recipes, does ALL of the shopping (have I mentioned I do not like grocery shopping?) and all the cooking. He prepares everything while I run around looking for props and setting up the camera, trying to help where I can and clean some of the dishes. I am one lucky girl!
He found this delicious recipe for Skillet Honey Lime Chicken and let me tell you, it is SO GOOD! It looks good but it tastes better! Yup. To be honest, anything with honey, soy sauce and lime sounds heavenly to me. Our goal was a quick, tasty meal that anyone could make after a busy day. To cut corners we used pre-made mashed potatoes. OMG! I know what you are thinking – NOW WAY am I serving potatoes from the pre-made section. I was the same way, but my Mom turned us on to them and they are almost better than homemade once you think about the time it takes to make them, plus we can get them Gluten Free for our family. Easy Peasy!
Along with the mashers, he served the chicken with a bag of frozen mixed vegetables. Normally, we would have done a salad, but somehow we forgot to add salad to the shopping list and frozen vegetables is what we have for those last minute emergencies. Real life problems! 🙂
It was delicious right when it was cooked and I was the lucky one to grab the leftovers which were almost better! The sauce is the best part be sure to pour that over the chicken and the potatoes- I hope you enjoy it as much as we did!

Skillet Honey Lime Chicken

Ingredients
- 1½ pounds boneless skinless chicken thighs (chicken breasts will also work)
- 2 Tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- ½ teaspoon salt
- ¼ teaspoon pepper
- ½ cup honey
- Juice of one lime
- zest of one lime
- 2 Tablespoons soy sauce
- 1 garlic clove, minced
Instructions
- In a medium sized skillet over medium heat add olive oil. In a small bowl combine cumin, chili powder, salt and pepper. Rub on chicken and place in skillet. Cook for 3-4 minutes on each side or until chicken is no longer pink and 165 degrees. Remove chicken and set aside on plate.
- Add honey, lime juice and zest, soy sauce and garlic. Bring to a boil over medium high heat and reduce heat and whisk until it starts to thicken. About 2 minutes.
- Add the chicken back to the skillet and coat in the sauce. Garnish with lime wedges if desired.
